Please share it here, will you? Healthy or not.... it's ok!

Asparagus-Vermicelli Toss

1 pound fresh asparagus
7 oz. uncooked Vermicelli
1 cup grape tomato halves
4 green onions, sliced
2 tbsp chopped fresh basil
1 1/2 tsp minced fresh thyme
1/4 tsp salt
1/2 tsp ground pepper
2/3 cup Italian dressing
2 tbsp lemon juice

Snap off tough ends of asparagus & cut into 2 inch pieces.

Cook pasta according to package directions, adding asparagus for last minute of cooking; drain. Rinse with cold water; drain.

Place pasta and asparagus in a large bowl. Add remaining ingredients, tossing to coat.

Chill if desired.

I'm eating a lot of fresh green salad recently and staying fit. My cholesterol is quite high this year. My PCP puts me on a 20mg Statin for 3 months. I was born with mitral valve prolapse aka heart murmur..

Please share any healthy recipes with no cholesterol, low carb and low sodium would be appreciated.

I will have to think on this, but there is such a wealth of information online today. When my doctor told me to go gluten AND sugar free, that was such a challenge. However, online and search engines saved me! lol! I could put specific guidelines into the search engine, and I found some awesome sites that give gluten free and sugar free ideas. Sometimes I would find gluten free but NOT sugar free, but I could adapt those recipes to my liking. I am being a bad girl right now, but I know I have to get back on track soon. It does take a little time and effort (esp to shop for and find foods and ingredients that I am not used to cooking with) but worth it for our health.

No they are fairly easy. That recipe I linked to has you making the dough but you can buy it if you don't want to bother. That makes it super easy.

This is a dip I make for casual gamedays or a few friends over:
1 pound of taco seasoned ground beef drained
1 can refried beans
1 small stick of Velveeta cheese
4 chopped scallions
1 jar of salsa ( your choice mild, medium, or hot)

cook altogether until cheese is melted ( you can use a crockpot on low)
Serve with warm tortilla chips and Margaritas. 🥳

Oh, yum! I make one with chili with no beans and you just melt in velveeta or even Cheese Whiz. Quick and easy, but yours sounds even better. YUM! 🙂

TWO ingredient YUMMY and EASY dessert:

Spread peanut butter dough (sugar cookie if you can't find peanut butter, but peanut butter is definitely best) out in 9 by 13 pan or other cookie sheet in thin layer. Chop up a bag of mini snickers bars and spread evenly on the dough. Bake at 350 oven for as long as the dough says on the package or until dough is golden.

Tried these at a family reunion last summer, and when I made them at home my boys loved them.

Yum! I like them frozen and slushy. I like lime, strawberry or raspberry. I can do without the salt, too. I had one with my mom when I visited her a few weeks ago. That was fun. 🙂

Here's one I like for picnics or a dish to pass. People alwayz seem to enjoy it:
1 box tri-colored pasta cooked al dente' (drained and cooled)
1 bottle Italian dressing
1 green pepper chopped fine
1 small can chopped black olives
1 jar drained salad olives

those are the basics...sometimes I add chopped water chesnuts, canned carrots, and/or some diced up cooked polish kielbasa and you can sprinkle about a quarter cup of parmsean cheese in it too for more flavor.

Yes! I love this one, and so does my family. We use pepperoni and black olives and the Italian dressing. It is nice, because you can get creative and either keep it simple or add more ingredients, depending upon what people like. I have added finely chopped cauli and brocolli and I have added cheese, etc., and I have had just made it the simple way, too.

EASY Shredded Chicken: (I also have a shredded beef recipe, but this one is even easier and cheaper!)

Throw however many chix breast you want in a crockpot. Add 1/4 to 1/2 cup of water. Add chicken boilliun (sp?), garlic (optional) salt or powder, OR Lipton onion soup mix (again, OPTIONAL, and I do not use this). Let cook on low all day until it becomes shredable with a fork.

You can throw them in thawed OR frozen: doesn't matter. Shred when done, then serve with buns, BQ sauce, mayo or Miracle Whip and other sauces people may want to add. Can serve with pickles and chips to keep it simple or whatever you want. SO easy!

I make a lot then use the leftover for casserole or to add to cold pasta salad.

This one is so easy once you peel the potatoes and carrots. I am guessing on how much for the veggies, because it varies. Put in however much looks right to you. In fact, it is called:

Easy Stew

One to two packages of stewing meat (I like to use a lot of meat, plus I feed hungry men, lol)
Six to eight potatoes peeled and diced
Six to eight carrots peels and chopped into chunks

Mix all and throw in roaster or crock pot.
Mix in one LARGE can tomato soup
Add about 1/2 of that can of water

Add salt and pepper and any other spice you want. I think the recipe called for Rosemary, but we are not big on t hat, so we leave it out.

Add any other veggies or spices you enjoy in a stew.

Put in 325 oven for three hours or until meat is tender and veggies cooked through. The meat will fall apart and "melt in your mouth."
OR
Put on low crockpot for the day until the same as above.

Now I think I might have already posted this, lol. Oh well. It is one with few ingredients, for luckwalker and all.

I am not sure if I posted my breakfast burritos yet. If not, I will post that next. It has only a few ingredients and they are yummy!

Does anyone like the Girl Scout thin mint cookies? If so, this is an EASY one, and it has to be cheaper than the Girl Scout cookies, lol!

Ritz Crackers
Ande's mint chocolate chip bits
OR (if you can't find those)
two to three boxes of Ande's mints

Melt Ande's chocolate in a pan or use a small crockpot, like for dips, like I do.
With tongs, dip ritz cracker into the melted creme de menthe chocolate and let excess drip back into the pan
Place on waxed paper

I add little Christmas Tree sprinkles for color for the holidays.

Done!

Just a little "putzy," but well worth the time and two to three boxes or a bag of chips will make a nice, big batch. YUM!

Wow you guys!! So happy to have found this thread, can't wait to try the Girl Scout Thin Mints,

And that very first one, Asparagus-Vermicelli Toss posted by Ubetcha sounds great!

Do ya'll ever roast veggies? When we were doing low carb I discovered how many things you can do with cauliflower, but I think everybody's favorite is roasted cauliflower.

I cut the floweretts off the stems (stalks?) and slice the stems or chop so they're about the same density/size as chunked up floweretts, toss them in a bowl or large baggie with evoo, sprinkle with garlic powder or salt and spread out in 1 layer on a cookie sheet lined with foil to make clean-up easier. Slide in a 350 degree oven for 30-45 min, stirring once or twice till tender as you like it.

One time I got busy and thought I'd left it too long, It looked kind of charred, but you won't believe it! It was better than ever! Now they tease me about serving burned veggies, but when it starts to carmalize it just bets better and better! That's why I gave so much leeway on roasting time.

It's better if you can have the pieces nice and uniform in size so they all cook evenly, cutting it up takes more time and effort than anything else, and don't forget to sprinkle with garlic! I was out one time, thought it wouldn't matter, but it DID! If I'm out garlic powder now, I just wait till I've got some!

The reason I started with my roasted cauliflower is because of Ubetcha's Asparagas (and grapes) and vermicelli. Just last week I came across a roasted dish, asparagus, grapes and chunks of red onion. Just toss it all in evoo, sprinkle with salt (probably doesn't have to be garlic salt here) and roast till the grapes start to split and veggies turn golden.

You can roast most any vegetable, or any combo, just have them same size/density or add them at different times so they all come out at the same time.

I could talk cookin' all nite ya'll, but it's getting late.

That sounds very good, but what is evoo?

I am supposed to go off all sugar, and also go non-gluten, but i do okay for a while, then I backslide very bad. Roasted veggies would be great on and off my sugar-free diet. Yum! And I love cauliflower and broccoli, too. Thanks for the great idea.

One more easy Christmas cookie.

Here is what you need:

Mini muffin pans
PB dough
Mini Reese's PB Cups

Make or buy PB dough. Fill mini muffin pan cups about 1/2 to 3/4 full. Bake as directed. You want the dough to puff up in the pan, but the bottoms and sides to be light brown. Take out of the oven and pop a mini-PB cup in the middle. Let cool so when you remove them from the pan they come out in one piece. If they want to break, use a spoon or thin knife to help get them out in one piece. Let sit until chocolate is hard again.

My sons love these. I can't seem to make enough. lol

I also make an appetizer in the mini-muffin pans called Party Hats with sausage and cheeses and WonTon wrappers. I think I will make those, and fudge, for New Year's Eve, because my sons are asking for Party Hats, and I didn't make them for Christmas Eve. They are so good, because they are so soft and greasy, lol, on the inside and crunchy on the outside. 🙂

Here is what I made for Christmas Eve, along with shrimp and cocktail sauce, and crackers with cream cheese and hot pepper jelly (that is SO good, too, and I don't even like spice, but the cream cheese neutralizes the spicy just right).

Sorry Hope, evoo is extra virgin olive oil, really big in low carb cooking. I didn't care for the flavor when I first started using it, but I guess it's grown on me. It's supposed to be heart healthy too.

Do you know much about low carb? It's also low (or no) sugar.

I've done the strict version of Atkins several times and had excellent results loosing weight till about 5 years ago when my hormones started messing up. Getting old stinks, but I guess it still beats the alternative. lol

Sorry again, getting off the subject of recipes here, but I've got tons of recipes and hints for Low Carb Lifestyle if you're interested.

Oh, yes. I do use olive oil. I just didn't connect that to the brand. I do like olive oil; dipping bread sticks in the really good "stuff." lol Yes, I know about low carb. In fact, back when I was trying to lose weight, I did the Dr. Atkins diet and The Zone. I now need to gain but without eating gluten or sugar.

I just got a really good book for Christmas from my son called, Wheat Belly. UNBELIEVABLE what it reveals on how our wheat/breads have changed since the days of grandma cooking (or maybe even great grandma). I heard the author speak on the radio, and I put it on my Christmas list. I can't wait to read/learn more.

If you want to look it up you can search Wheat Belly by William Davis, M.D. I will say a little more about when I get more time.

I am very interested in gluten free, sugar free recipes. 🙂 Also anything in that category that will help me gain weight. I struggle with keeping any weight on at all, and I eat like a horse. It is an adrenal system thing, which I am also working on: long story, lol

Here I am supposed to be giving up sugar, and I keep posting sweets recipes, lol, but it IS the holiday time.

Does everyone know about Puppy Chow? My sons love this, and so do my nephews and my niece. It is a fun one to make with the kiddos, because they can shake the heck out of the cereal in the paper bag of powdered sugar at the end (secure tightly first! lol!).

I am lazy tonight, so instead of writing it out, here is the link to the original recipe that we make every year for the holidays:

This one says to use a Ziploc plastic bag, but we use the paper bags from the grocery store so we can get the entire batch into one bag. Also, if you can't find a large bowl, you can mix it in a 9x13 baking pan: that works, too, but NO baking involved, just mixing. 🙂

Here is a VERY easy dessert:

One box angel food cake mix
One can lemon pie filling
One can cream cheese frosting OR one tub of Cool Whip

In large bowl, fold cake mix into pie filling. Mix well.
Spread in 9x13 LIGHTLY greased pan
Bake on 350 degrees for 15-20 minutes (I checked at 15 minutes due to gas oven and cake was done, so watch carefully. Sides will be lightly brown and toothpick will come out clean in middle).

Let cool then spread with frosting or whipped cream.
We like the cool whip best, because it makes for a very "light" dessert. This is especially good in the summer and when chilled. I do love cream cheese frosting, though, lol, and it was good with that, too.

Can't get easier than this!

Definitely put some frosting on it, even if a thin layer of the Cool Whip or other whipped cream. It is really good chilled and an awesome summer dessert.
